Not much cooking this week. I did the usual. Nothing out of the ordinary. Except for strawberries. They are on sale at Aldi for only $1.46 a pint. So,I bought 4 pints. I’ve been cutting them up, sprinkling a bit of sugar on them and topping them off with lots and lots of whipped cream (15 calories per 2 tablespoons. Cool!) We’ve been having them almost every night for dessert. One night I tried to jazz them up a bit by serving them over tiny pancakes. Delicious. And any leftover pancakes came in handy the next day for breakfast.

We did have one splurge this week, however. I defrosted an older but still good roast beef. Originally sold at $17, but on sale for $12. I can only imagine what it would cost today. Probably $12 just for a single pound! After we cooked it up, it shrank. Looked so small. But since there are only two of us, it was perfect. Ditto for lunch the next day. And then dinner the next evening served with a side of mashed potatoes and brown gravy (from a mix).

Sunday late afternoon, is our usual: pasta with marinara sauce, top with grated Parmesan cheese. I made the sauce this weekend. Hubby grunted (as he usually does the Sunday cooking) but after one bite, he seemed to agree with my recipe. (I always include a dollop of part skim ricotta cheese. Look for it. It’s in there!)

I only made one complete dinner this week. I roasted up 7 skinless thighs in the oven (click here for the recipe). Along side, I roasted brussel sprouts with olive oil and garlic. I made a batch of brown rice in the rice cooker. This meal lasted a few days and for a few lunches.
